Bidrottningen (“The Queen Bee”) was established in 2005, but the idea and business concept was born in the early 1990’s in Australia where they studied wine and sensory evaluation and observed the wide range of nectar-specific honeys (known as varietal honeys). The operation is kept small-scale to ensure that a variety of honey can be collected several times every season.
